Irizake is a sake-based sauce that gained popularity after World War II, when Japan experienced a shortage of soy sauce. With its blend of dashi and umeboshi plum, irizake was used as a seasoning and was mainly used to remove the odors of meat and fish. It is prepared with a base of premium cooking sake that has been heated, and it still contains traces of alcohol.

Flavor: The combination of dashi with ume plum vinegar gives an umami and tangy flavor, well balanced, slightly salty.
Usage : You can dip your sashimi slices in irizake or prepare shabu shabu with it, by marinating your meat with irizake before cooking it in hot water. This mixed sake is also used to prepare summer vegetables before frying them, and thus give them a light salty flavor, without masking their original taste.
