35 years ago, the “Namashibori Process” was established with the aim of perfecting the making of delicious old-fashioned tofu. In China, the birthplace of tofu, the "raw pressing method" remains predominant, as tofu is a widely consumed staple food. However, the constraint of producing a significant quantity of tofu from the same soybeans led to a fruitful collaboration with the Tohoku University laboratory.
Thanks to this cooperation, an in-depth scientific analysis of bitterness and astringency was carried out, allowing the optimal development of the manufacturing process. At the same time, specific machines were independently designed for the factory, covering various needs such as milk production and fruit juice pressing in collaboration with manufacturers. This innovative approach resulted in the creation of the only mass production factory in Japan using the "Namashibori process".
