Packaged in a plastic jar, this pink marinated ginger in strips, called "gari" or "gari shoga", a condiment of Japanese origin will accompany your sushi tastings.

It is tasted between two sushis of different composition since its role in refreshing the palate is to remove the aromas of the last sushi in order to appreciate the flavors of the next one.
